When
you visit my restaurant
VAU, you're really visiting me, Kolja Kleeberg. The trust bestowed
by my guests is tremendously important to me. It's the trust that
they'll have a fine evening, a celebration of life's joys. That's
more than just a culinary experience or even the constant anticipation
of the next course. For me dining involves learning about oneself
and sharing a pleasure. And it's part of my nature as a host to
take the time to talk and visit with my guests.
I'm there for everyone who comes in and sits down. And when I see
the happy faces and shining eyes of my guests – that's when
I know why I became a cook.
